Ingredients
  

  • 3 large overripe bananas
  • 1/2 cup cottage cheese
  • 1/2 cup unsweetened applesauce
  • 1/2 cup sugar
  • 2 large eggs room temperature
  • 1 3/4 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C). This step is crucial to ensure even baking.
  • Grease your loaf pan with a little oil or non-stick spray, or line it with parchment paper for easy removal later.
  • In a large mixing bowl, use a fork to mash the overripe bananas until smooth. You want them to be creamy with no large lumps.
  • Add the cottage cheese, unsweetened applesauce, sugar, and eggs to the mashed bananas. Whisk these ingredients together until well combined and smooth.
  • In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Sifting is important for a light texture.
  • Gradually add the dry mixture to the wet ingredients. Using a spatula, fold the mixture gently until just combined. Do not overmix; a few lumps are okay.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
