  • ¾ cup All-purpose flour
  • 1 tablespoon Baking powder
  • 2 tablespoons Granulated sugar
  • ½ teaspoon Salt

Wet Ingredients

  • 3 large Eggs
  • 1 ¼ cups Cottage cheese Small curd is ideal
  • 2 tablespoons Unsalted butter Melted
  • 1 teaspoon Vanilla extract

  • Step 1: Prepare Your Ingredients - Start by gathering all your ingredients.
  • Step 2: Mix the Dry Ingredients - In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk until well blended.
  • Step 3: Whisk the Wet Ingredients - In another bowl, crack the eggs and whisk them. Add the cottage cheese, melted butter, and vanilla extract. Mix until just combined.
  • Step 4: Combine the Mixtures - Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula, being careful not to overmix.
  • Step 5: Heat the Pan - Place a non-stick skillet over medium heat and let it heat up. Optionally, add butter or oil to prevent sticking.
  • Step 6: Cook the Pancakes - Scoop about ¼ cup of batter onto the skillet. Cook until bubbles form on the surface, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.
  • Step 7: Keep Warm and Serve - Keep finished pancakes warm on a plate covered with a kitchen towel or in a low oven. Serve with your favorite toppings.

Notes

For best texture, use small curd cottage cheese. If the batter is too thick, thin with milk or water. Let the batter rest for 5 minutes before cooking.
