Ingredients
  

  • 8 oz fettuccine pasta
  • 2 tbsp olive oil for sautéing
  • 1 lb chicken breast diced
  • 2 cups mushrooms sliced, cremini or white
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • salt to taste
  • black pepper to taste
  • fresh parsley chopped for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add the 8 oz of fettuccine pasta and cook according to package directions until al dente, about 10-12 minutes. Reserve about 1/2 cup of the pasta water, then drain the pasta and set aside.
  • While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced chicken breast and season lightly with salt and black pepper. Cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms. Sauté for about 5 minutes, until they release moisture and turn golden brown. Add the minced garlic and cook for another 1-2 minutes until fragrant. Be careful not to burn the garlic.
  • Pour in 1 cup of chicken broth, scraping the bottom of the skillet to loosen browned bits. Add 1 cup of heavy cream and stir to combine. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
  • Return the cooked chicken to the skillet and stir in 1/2 cup of grated Parmesan cheese. Add the cooked fettuccine pasta and toss everything together. If the sauce is too thick, add a splash of the reserved pasta water to loosen it. Adjust seasoning with salt and black pepper to taste.
  • Sprinkle freshly chopped parsley over the pasta for color and freshness. Serve immediately for the best creamy texture.
