- 8 oz pasta (fettuccine or penne works best for holding the sauce)
- 1 lb shrimp peeled and deveined
- 2 cups broccoli florets
- 1 cup heavy cream
- 2 cloves garlic minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 tsp red pepper flakes optional, for a gentle kick
- Fresh parsley chopped for garnish
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. About 2-3 minutes before the pasta is done, add the broccoli florets to the boiling water to blanch them until tender but still crisp. Drain both the pasta and broccoli, then set aside.
While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp, seasoning them with salt, pepper, and red pepper flakes if using. Cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside to avoid overcooking.
In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, making sure not to burn it. Pour in the heavy cream and gently simmer for 3-4 minutes, stirring occasionally until the cream slightly thickens.
Add the cooked pasta and broccoli back into the skillet with the creamy sauce. Stir to coat everything evenly. Return the shrimp to the pan, and sprinkle in the grated Parmesan cheese. Toss gently until the cheese melts into the sauce and everything is warmed through.
Remove from heat and garnish with freshly chopped parsley. Serve immediately while warm, perhaps alongside a crisp green salad or some crusty bread for a complete meal.
