Equipment

  • Large Bowl
  • Small Bowl
  • Non-stick skillet or griddle
  • Whisk
  • Toothpick or spoon

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 0.25 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.5 cup cream cheese softened
  • 0.25 cup powdered sugar
  • 1 tablespoon milk

Instructions

Step 1: Prepare the Pancake Batter

  • In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. It’s okay if the batter is a little lumpy—overmixing can make the pancakes tough.

Step 2: Make the Cinnamon Sugar Swirl

  • In a small bowl, mix the brown sugar and ground cinnamon until evenly combined. This will be your delicious cinnamon swirl to mimic the classic cinnamon roll filling.

Step 3: Cook the Pancakes with the Cinnamon Swirl

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  • Pour about 1/4 cup of pancake batter onto the skillet. Before the batter sets, sprinkle a teaspoon of the cinnamon sugar mixture over the pancake.
  • Using a toothpick or the back of a spoon, swirl the cinnamon sugar into the batter to create those signature cinnamon roll swirls.
  • Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges look set.
  • Flip carefully and cook for another 1-2 minutes until golden brown and cooked through. Repeat with the remaining batter and cinnamon sugar.

Step 4: Prepare the Cream Cheese Glaze

  • In a small bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and milk, and whisk together until creamy and pourable. If the glaze is too thick, add a little more milk, a teaspoon at a time, until you reach your desired consistency.

Step 5: Serve and Enjoy

  • Stack your Delicious Cinnamon Roll Pancakes on a plate and generously drizzle the cream cheese glaze over the top.
  • Serve immediately with extra butter or syrup if you like, and enjoy the perfect blend of pancakes and cinnamon rolls in every bite!

Notes

  • Stir the batter just until combined to keep pancakes light and fluffy; overmixing makes them tough.
  • Use medium heat to cook pancakes evenly without burning.
  • Softened cream cheese is key for a smooth, creamy glaze.
  • Store leftovers in the refrigerator for up to 3 days or freeze up to 2 months.
  • Try variations like adding nuts, fruit, or swapping glaze for a maple version.
