Easy Baked Chipotle Salmon

A simple, spicy baked salmon flavored with chipotle, garlic, lime, and cumin.

Ingredients
  

  • 1 lb salmon fillet
  • 1 clove garlic
  • 1 chipotle pepper (in adobo)
  • 2 teaspoons adobo sauce see notes
  • 1/2 lime lime juice of
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin optional
  • 2 tablespoons oil

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Add the garlic, chipotle pepper, adobo sauce, lime juice (from 1/2 lime), salt, pepper, cumin (if using), and oil to a food processor or blender.
  • Blend until the garlic is finely minced and the mixture is combined, about 1 minute.
  • Slice the 1 lb salmon fillet into even portions (2–3 pieces) and place them skin-side down in a lined baking dish.
  • Rub the chipotle mixture all over the salmon, covering the top, sides, and skin side.
  • Bake in the preheated oven for 12–15 minutes, or until the salmon is just cooked through and flakes easily with a fork.
  • Remove from the oven and serve with your choice of sides.

Notes

  • Use the chipotle pepper with some adobo sauce as noted above.
  • Store leftover canned chipotle and adobo sauce in the fridge in a sealed container.
  • Do not overcook the salmon to avoid dryness.
