- 2 tablespoons unsalted butter
- 8 ounces sliced mushrooms
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- fresh chopped parsley for garnish
Preheat your oven to 375°F (190°C). Season the thinly sliced chicken breasts generously with salt, pepper, and Italian seasoning.
In a skillet, melt the unsalted butter over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until tender and moisture is released.
