Ingredients
  

  • 4 thinly sliced chicken breasts
  • salt and pepper to taste
  • 1 tablespoon Italian seasoning
  • 2 tablespoons unsalted butter
  • 8 ounces sliced mushrooms
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • fresh chopped parsley for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Season the thinly sliced chicken breasts generously with salt, pepper, and Italian seasoning.
  • In a skillet, melt the unsalted butter over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until tender and moisture is released.
  • Arrange the seasoned chicken breasts in a single layer in a baking dish. Pour the sautéed mushrooms evenly over the chicken, then add the chicken broth.
  • Sprinkle the shredded mozzarella cheese generously over the mushrooms and chicken.
  • Cover the baking dish with aluminum foil and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Remove the foil for the last 5-10 minutes to brown the cheese.
  • Remove from oven and let rest a few minutes. Garnish with fresh chopped parsley. Serve hot and enjoy!

  • Use a meat thermometer to ensure chicken is cooked to 165°F for safety and juiciness.
  • Sautéing mushrooms first prevents excess liquid and adds rich flavor.
