  • 6 large eggs
  • 1 cup heavy cream (double cream in the UK)
  • 1 small yellow onion, diced
  • 1 large clove garlic, minced
  • 12 ounces fresh broccoli florets, cut into small pieces
  • 4 ounces feta cheese, crumbled
  • 1 tablespoon unsalted butter
  • ½ teaspoon smoked paprika
  • ¾ teaspoon kosher salt, divided
  • ¼ teaspoon ground black pepper

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: Bring a small pot of salted water to a boil. Blanch the broccoli florets for 2-3 minutes until vibrant green and just tender. Drain and set aside.
  • Step 3: In a large skillet, melt the butter over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent. Add the minced garlic and sauté for an additional minute.
  • Step 4: In a large mixing bowl, whisk together the eggs and heavy cream. Stir in the smoked paprika, ½ teaspoon of salt, and black pepper. Add the sautéed onions and garlic, blanched broccoli, and crumbled feta cheese. Gently fold until well combined.
  • Step 5: Pour the mixture into a greased pie dish or a 9-inch round baking dish, spreading it out evenly.
  • Step 6: Bake for 30-35 minutes until set in the center and lightly golden on top. A knife inserted should come out clean.
  • Step 7: Let the quiche sit for 5-10 minutes before slicing. Enjoy warm or at room temperature!

Notes

For added flavor, try using different herbs or spices. You can also substitute the cheese or add cooked bacon or turkey for a meatier version.
