Ingredients
  

  • 1 pound carrots peeled and cut into sticks or rounds
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon lemon juice
  • 1 pinch cinnamon
  • salt & pepper to taste
  • 1 tablespoon chopped fresh parsley optional, for garnish

Instructions
 

  • Start by peeling the carrots and cutting them into even sticks or rounds to ensure they cook uniformly.
  • In a large skillet, melt the butter over medium heat until bubbly but not browned, about a minute.
  • Add the prepared carrots to the skillet and stir to coat evenly in the butter.
  • Sprinkle the brown sugar over the carrots and stir to combine, starting the glaze formation.
  • Add lemon juice, cinnamon, salt, and pepper. Stir well, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
  • Remove the lid, increase heat to medium-high, and cook for 2-3 minutes, stirring often, until the glaze thickens and coats the carrots.
  • Sprinkle with fresh parsley if desired and serve warm as a delightful side dish.

  • Substitute plant-based butter or coconut oil for a dairy-free or vegan option.
  • Reduce brown sugar or use sugar substitutes for a low-sugar variation.
