Meat thermometer (optional)
Ingredients
2
lb
boneless skinless chicken breast
cut into 1–2" chunks
2
tbsp
Greek seasoning
1
tbsp
fresh lemon juice
2
tbsp
olive oil
divide: 1 tbsp for marinade and 1 tbsp for cooking
Instructions
Cut the chicken breasts into 1–2" pieces and place them in an airtight container or a bowl.
Add 2 tbsp Greek seasoning, 1 tbsp fresh lemon juice, and 1 tbsp olive oil to the chicken; mix until evenly coated.
Cover and refrigerate the chicken to marinate for 15 minutes.
Heat the remaining 1 tbsp olive oil in a large skillet over high heat until hot.
Add the chicken in a single layer and cook without stirring for 3–5 minutes to develop a brown sear on the side touching the pan.
Flip the pieces and cook for an additional 2–4 minutes, or until the chicken reaches 165°F (74°C) internally and is cooked through.
Remove from the skillet and serve hot.
