Ingredients
  

  • 1/4 cup low sodium soy sauce
  • 1/4 cup honey
  • 1 teaspoon lemon zest from a small lemon
  • 3 tablespoons lemon juice from 1-2 lemons
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon grated ginger root
  • 4 cloves garlic minced
  • 1 teaspoon chili garlic sauce
  • 1.5 pounds chicken breast cut into 1-inch pieces
  • 1/2 cup corn starch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 10 ounces green beans trimmed and cut in half
  • 1-2 tablespoons vegetable oil
  • 1 teaspoon sesame seeds optional, for garnish

Prepare the Ingredients

  • Start by gathering all your ingredients. Cut the chicken breast into 1-inch pieces and trim the green beans. Mince the garlic and grate the ginger, setting everything aside for easy access while cooking.

Make the Sauce

  • In a small bowl, whisk together the low sodium soy sauce, honey, lemon zest, lemon juice, toasted sesame oil, minced garlic, grated ginger, and chili garlic sauce.

Coat the Chicken

  • In a separate bowl, combine the corn starch, salt, and pepper. Toss the chicken pieces in the mixture until they’re evenly coated.

Cook the Chicken

  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Once hot, add the chicken in a single layer. Cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the pan and set aside.

Stir Fry the Vegetables

  • In the same pan, add another tablespoon of vegetable oil if necessary. Add the green beans and stir-fry for about 3-4 minutes until tender but still crisp.

Combine Everything

  • Return the cooked chicken to the pan with the green beans. Pour the sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Serve

  • Once everything is well combined and heated through, remove the stir fry from the heat. Serve immediately, garnished with sesame seeds if desired.
