Easy Mexican-Inspired Hummus

Ingredients
  

  • 1/4 cup tahini smooth, creamy variety
  • 3 to 4 tablespoons lemon juice freshly squeezed
  • 1 large clove garlic peeled and minced
  • 2 to 3 tablespoons olive oil plus more for drizzling
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika or smoked paprika choose smoked for extra depth
  • to taste salt and black pepper
  • tiny pinch cayenne pepper optional
  • 1 16-ounce can BUSHS Garbanzo Beans drained and rinsed
  • 2 to 4 tablespoons reserved bean liquid adjust for desired consistency
  • 1 cup pico de gallo freshly made or store-bought
  • 2 teaspoons fresh cilantro leaves finely minced
  • corn tortilla chips, crackers, or vegetable sticks for serving and dipping

Instructions
 

Step 1: Gather Your Ingredients

  • Start by gathering all of your ingredients on the countertop. This will make the process smoother and quicker!

Step 2: Blend the Base

  • In your food processor, combine the tahini, lemon juice, garlic, olive oil, cumin, paprika, and a pinch of salt and black pepper. Blend until smooth.

Step 3: Add the Chickpeas

  • Add the drained and rinsed garbanzo beans to the food processor. Blend again until the mixture is creamy. You may need to stop and scrape down the sides to ensure everything is well mixed.

Step 4: Adjust Consistency

  • If the hummus is too thick, add 2 to 4 tablespoons of the reserved bean liquid one tablespoon at a time until you reach your desired consistency. Blend after each addition.

Step 5: Incorporate the Pico de Gallo

  • Add the pico de gallo and cilantro to the mixture. Pulse a few times until just combined. You want some texture from the pico de gallo, so don’t over-blend!

Step 6: Taste and Adjust Seasoning

  • Give your hummus a taste, and adjust the seasoning with more salt, pepper, or a pinch of cayenne pepper if you like it spicy.

Step 7: Serve and Enjoy

  • Transfer the hummus to a serving bowl. Drizzle with a little more olive oil and sprinkle additional paprika on top for garnish. Serve with corn tortilla chips, crackers, or vegetable sticks.

Notes

  • Customize the spices to your preference; add more cumin or smoked paprika for richer flavor.
  • If pico de gallo is unavailable, make your own with diced tomatoes, onions, jalapeños, cilantro, and lime juice.
  • Store hummus in an airtight container in the refrigerator for up to 5 days.
