Ingredients
  

  • 12 large Medjool Dates pitted for easy stuffing
  • 1/2 cup Peanut Butter creamy or crunchy
  • 1/4 cup Chopped Peanuts Virginia peanuts used for added crunch
  • 1/4 cup Chocolate Chips melted, optional for drizzling

Instructions
 

Prepare the Dates

  • Rinse the Medjool dates under cool water to remove any residual sand or debris. Pat them dry with a clean towel. Carefully slice each date lengthwise on one side, making sure not to cut all the way through. Use your fingers to gently open the date and remove the pit.

Mix the Peanut Butter

  • In a medium-sized bowl, combine the peanut butter and chopped peanuts. For a creamier consistency, use creamy peanut butter alone or mix in a bit of honey for extra sweetness if desired.

Stuff the Dates

  • Using a spoon, fill each date with the peanut butter mixture generously. Press the sides of the dates together gently to hold in the peanut butter.

Melt the Chocolate (Optional)

  • Place the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted and smooth.

Drizzle the Chocolate

  • Using a fork or spoon, drizzle the melted chocolate over the stuffed dates to add a delightful touch of sweetness.

Chill and Serve

  • Place the stuffed dates on a plate and refrigerate for about 15-20 minutes to allow the chocolate to set. Once firm, they are ready to be enjoyed.

  • Soak dates in warm water if they are too dry before stuffing.
  • Microwave peanut butter briefly if it is too thick to spread easily.
