- 10 oz. frozen chopped spinach thawed and thoroughly drained/patted dry
- 1 tablespoon olive oil
- 0.5 onion diced
- 0.5 red bell pepper diced
- 2 cloves garlic minced
- 2 tablespoons prepared pesto Basil pesto from Costco recommended
- 0.5 teaspoon Worcestershire sauce
- 0.25 teaspoon paprika
- 0.25 teaspoon salt
- 0.125 teaspoon pepper
- 0.5 cup mayonnaise reduced-fat
- 4 oz. cream cheese softened, less fat
- 0.5 cup sour cream reduced-fat
- 1 cup freshly grated Parmesan cheese
- 0.5 cup freshly grated sharp cheddar cheese
- 0.5 cup freshly grated mozzarella cheese
Sauté the Veggies
In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until soft, about 3-4 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
