In a large skillet, heat the olive oil or avocado oil over medium heat. Add the lean ground beef and cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes.
Once the beef is cooked, drain excess fat if necessary. Sprinkle in the chili powder, ground cumin, kosher salt, smoked paprika, garlic powder, onion powder, and dried oregano. Stir to combine and cook for another minute until fragrant.
Pour in 1/2 cup of water and bring to a simmer. Let the mixture cook for about 5 minutes until the water is mostly evaporated and the beef is nicely coated with the spices. Remove from heat.
Preheat your oven to 400°F (200°C). Arrange the flatbreads on a baking sheet. Spread refried beans evenly over each flatbread, followed by a layer of the seasoned beef mixture.
Drizzle the salsa or taco sauce over the beef and top with shredded cheese. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
Once out of the oven, let the pizza cool slightly. Top with shredded lettuce, chopped tomatoes, chopped avocado, and crumbled cotija cheese. Finish with pickled red onions and chopped cilantro.
