  • 1 15-oz container ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese divided

  • 1 tsp garlic powder
  • 1 Tbsp dried parsley
  • 12 egg roll wrappers
  • 1 24-oz jar spaghetti sauce

Cooking Egg Roll Manicotti: The Process

  • Start by preheating your oven to 375°F (190°C). This ensures that your Egg Roll Manicotti will bake evenly and thoroughly.
  • In a large mixing bowl, combine the ricotta cheese, large egg, 1 cup of shredded mozzarella cheese, grated parmesan cheese, garlic powder, and dried parsley. Mix well until all the ingredients are fully incorporated and creamy.
  • Lay out an egg roll wrapper on a clean, dry surface. Spoon a generous amount of the cheese filling onto the center of the wrapper. Fold the sides over the filling and roll it tightly, similar to how you would roll a traditional egg roll. Repeat this process with the remaining wrappers and filling.
  • Spread a thin layer of spaghetti sauce on the bottom of a baking dish. This will prevent the Egg Roll Manicotti from sticking and add flavor.
  • Place the assembled egg rolls seam-side down in the baking dish, fitting them snugly together. Once all the egg rolls are in place, pour the remaining spaghetti sauce over the top, ensuring each roll is well-coated.
  • Sprinkle the remaining 1 cup of shredded mozzarella cheese over the top of the sauce. This will create a deliciously cheesy crust as it bakes.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freeze unbaked manicotti wrapped tightly for up to 2 months; bake from frozen adding extra time.
