- 3 large eggs room temperature
- 6 tablespoons ground flaxseed
- 0.5 cup pre-shredded mozzarella
- 0.5 cup water warm
- pinch sea salt
Gather all your ingredients. If using whole flaxseeds, mill them into a fine flour using a blender or food processor.
In a mixing bowl, crack the 3 large eggs and whisk until well beaten. Add warm water and a pinch of sea salt, mixing until combined.
Gradually add the ground flaxseed to the egg mixture, stirring to combine. Then fold in the pre-shredded mozzarella cheese. The mixture will thicken as the flaxseed absorbs moisture.
Place a non-stick skillet over medium heat and let it warm. Lightly grease if desired, but usually not necessary with a good non-stick skillet.
Pour about ¼ cup of batter into the skillet, spreading gently to form a circle. Cook for 2-3 minutes until edges lift and bottom is golden brown. Flip and cook 1-2 minutes more.
Repeat until all batter is used, stacking finished wraps on a plate. Keep warm in a low oven if serving together.
