Ingredients
  

  • 2 large ripe bananas the riper, the better for natural sweetness
  • 2 large eggs for binding and moisture
  • 1 15-oz can black beans rinsed and drained for a smooth texture
  • 1/3 cup cocoa powder unsweetened to give that rich chocolate flavor
  • 1/3 cup coconut sugar a natural sweetener that enhances flavor
  • 1 tsp vinegar or lemon juice to react with the baking soda for a fluffier texture
  • 1/2 tsp baking powder for a little lift
  • 1/2 tsp baking soda helps the bread rise
  • 1/4 tsp sea salt enhances all the flavors
  • 3/4 cup chocolate chips optional, for an extra chocolatey experience

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures your bread bakes evenly and rises beautifully.
  • In a mixing bowl, mash the ripe bananas until smooth. This will serve as the base for your batter.
  • In a blender or food processor, combine the mashed bananas, black beans, eggs, cocoa powder, coconut sugar, vinegar or lemon juice, baking powder, baking soda, and sea salt. Blend until the mixture is completely smooth and well combined.
  • If you’re using chocolate chips, fold them into the blended batter with a spatula. This adds a delightful melty surprise in each slice.
  • Pour the batter into a greased loaf pan, spreading it evenly.
  • Place the loaf pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Notes

  • Substitute eggs with flax eggs to make this recipe vegan.
  • Add cinnamon or vanilla extract for a warm, spicy flavor twist.
