Step 1: Whisk together the milk and eggs in a large mixing bowl. Add the vegetable oil or melted butter, granulated sugar, and salt. Mix until well combined.
Step 2: Gradually sift in the flour while continuously whisking until the batter is smooth and runny. Let the batter rest for about 30 minutes.
Step 3: Heat a non-stick skillet over medium heat and add a light coating of oil or melted butter.
Step 4: Pour a small amount of batter into the center of the hot pan, tilt and swirl to spread into a thin layer. Cook for 1-2 minutes, flip, and cook for another 30 seconds to 1 minute.
Step 5: Fill the crepes with your favorite ingredients, fold, and enjoy!
Notes
For extra flavor, add a splash of vanilla extract or a sprinkle of cinnamon into the batter. The batter can be made a day in advance and stored in the fridge.
