For the Pie Crust:
- 1 cup All-Purpose Flour
- 1 stick Unsalted Butter
- 2 teaspoons Sugar
- pinch Sea Salt
- 1/4 cup Ice Cold Water
For the Filling:
- 1 cup Unsalted Butter
- 1 cup Sugar
- 2 teaspoons Vanilla Extract
- 4 ounces Semi-Sweet Chocolate
- 4 Large Eggs
For the Topping:
- 3 cups Heavy Whipping Cream
- 2/3 cup Sugar
Prepare the Pie Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 cup all-purpose flour, 2 teaspoons sugar, and a pinch of sea salt. Cut in 1 stick of unsalted butter until mixture resembles coarse crumbs. Gradually add 1/4 cup ice cold water, mixing until dough comes together.
On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Transfer dough to dish, pressing into bottom and sides. Trim excess dough.
Prick bottom of crust with fork to prevent bubbling. Bake for 15-20 minutes until lightly golden. Remove and let cool completely.
Make the Filling
Melt 4 ounces semi-sweet chocolate using a double boiler or microwave until smooth. Set aside to cool slightly.
In a large mixing bowl, cream together 1 cup unsalted butter and 1 cup sugar until light and fluffy. Add 2 teaspoons vanilla extract and melted chocolate; mix until combined.
Add 4 large eggs one at a time, beating well after each addition to achieve silky texture.
Pour chocolate filling into cooled pie crust and spread evenly. Refrigerate at least 4 hours until set.
Finish the Pie
Just before serving, whip 3 cups heavy whipping cream with 2/3 cup sugar until soft peaks form. Spread whipped cream over chilled chocolate filling.
Optionally garnish with chocolate shavings or curls. Slice and serve.
