Ingredients
  

  • 6 tablespoons extra virgin olive oil
  • 4 garlic cloves minced
  • 1 small sprig rosemary for frying
  • 2 teaspoons rosemary chopped, divided
  • 8 ounces goat cheese at room temperature
  • 4 ounces cream cheese at room temperature
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Preparation

  • Begin by gathering all your ingredients. Chop the fresh rosemary and mince the garlic cloves, ensuring they are ready for frying.

Frying Garlic and Rosemary

  • In a frying pan over medium heat, add the 6 tablespoons of extra virgin olive oil. Once the oil is hot, carefully add the minced garlic and the small sprig of rosemary.
  • Fry them gently for about 2-3 minutes, or until the garlic is golden and fragrant—be careful not to burn it! Once done, remove from heat and let cool slightly.

Mixing the Dip

  • In a mixing bowl, combine the goat cheese and cream cheese. Using a spatula, mix until smooth and creamy.
  • Add the cooled garlic and rosemary oil mixture (including the garlic and the sprig of rosemary) to the cheese mixture. Then, add the 2 teaspoons of chopped rosemary, 2 teaspoons of lemon juice, and 1 teaspoon of lemon zest. Season with kosher salt and freshly ground black pepper to taste.
  • Mix everything together until well combined and creamy. Taste the dip and adjust the seasonings if necessary.

Serving

  • Transfer the dip to a serving bowl. Drizzle a little extra olive oil on top for presentation, and sprinkle with additional chopped rosemary if desired. Serve warm with your favorite dippers, such as crusty bread, crackers, or fresh veggies.
