Ingredients
  

For the Sugar Cookie Cups:

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 1/2 cup funfetti

For the Vanilla Frosting:

  • 1 cup unsalted butter softened to room temperature
  • 3 to 3.5 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 Tablespoon heavy whipping cream

Preparation

  • Preheat your oven to 350°F (175°C). This ensures that your cookie cups bake evenly.
  • Lightly grease a muffin tin with cooking spray or line it with cupcake liners. This will help prevent the cookie cups from sticking.

Make the Cookie Dough

  • In a large mixing bowl, beat together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes with an electric mixer.
  • Add in 1 large egg and 2 teaspoons of vanilla extract, mixing until well combined.
  • In another bowl, whisk together 1 and 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  • Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined. Be careful not to overmix!
  • Gently fold in 1/2 cup of funfetti until evenly distributed throughout the dough.
  • Using a cookie scoop, drop dough into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Make the Frosting and Assemble

  • In a mixing bowl, beat together 1 cup of softened unsalted butter with 3 to 3.5 cups of powdered sugar, 1 teaspoon of vanilla extract, and 1 tablespoon of heavy whipping cream until smooth and fluffy.
  • Once the cookie cups are completely cool, pipe the vanilla frosting onto each cookie cup, creating a beautiful swirl.
  • For an extra festive touch, sprinkle additional funfetti on top of the frosted cookie cups.
