Equipment

  • Large baking sheet
  • Mixing Bowl
  • Spatula or wooden spoon
  • Sharp Knife
  • Measuring Spoons

Ingredients

  • 2 lbs golden potatoes
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons Ranch dry seasoning mix
  • 1 teaspoon Italian seasoning
  • 2 teaspoons minced garlic
  • Salt and black pepper
  • ¾ cup shredded Parmesan cheese
  • Chopped parsley for garnish

Instructions

  • Preheat your oven to 425°F (220°C) to achieve a crispy exterior on the potatoes.
  • Wash and scrub the golden potatoes thoroughly, then cut into even chunks about 1 to 1.5 inches each for uniform cooking.
  • In a large mixing bowl, combine melted unsalted butter, olive oil, Ranch dry seasoning mix, Italian seasoning, minced garlic, salt, and black pepper; stir well.
  • Add the chopped potatoes to the bowl and toss until evenly coated with the seasoning mixture.
  • Spread the seasoned potatoes in a single layer on a large baking sheet and roast for 25-30 minutes, tossing halfway through for even cooking.
  • In the last 5 minutes of roasting, sprinkle shredded Parmesan cheese over the potatoes and return to the oven to melt and crisp.
  • Remove from oven, garnish with chopped parsley, and serve warm as a delicious side dish.

Notes

  • For a vegan version, use plant-based butter and substitute Parmesan with nutritional yeast.
  • Marinate the potatoes in the seasoning mixture for 30 minutes before roasting for extra flavor.
  • Leftovers can be stored in the fridge up to 4 days and reheated in the oven or skillet to regain crispiness.
