Instructions
Pat the chicken thighs dry with paper towels, then season with garlic powder, smoked paprika, kosher salt, and black pepper.
Heat vegetable oil in a large skillet over medium-high heat. Sear chicken thighs for 5-7 minutes per side until golden brown. Remove and set aside.
Reduce heat to medium and add grated ginger and minced garlic. Stir for 30 seconds until fragrant.
Pour in apricot preserves, soy sauce, and honey. Stir well and let simmer for 2-3 minutes until slightly thickened.
Return the chicken to the skillet, coating each piece in the glaze. Cook for another 5-10 minutes until the internal temperature reaches 165°F (75°C).
Transfer to a serving platter, drizzle with extra glaze, and garnish with sliced green onions.
Serve with steamed rice or vegetables.
Notes
For extra flavor, add a pinch of red pepper flakes to the glaze. This dish pairs wonderfully with a side of roasted vegetables or a fresh salad.
