Ingredients
  

Chicken

  • 2 pounds boneless and skinless chicken thighs

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper

Cooking Oil

  • 1 tablespoon vegetable oil (15 ml)

Glaze

  • 1 cup apricot preserves (240 ml)
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • 0.25 cup soy sauce (60 ml)
  • 1 tablespoon honey

Garnish

  • sliced green onions for garnish

Instructions
 

  • Pat the chicken thighs dry with paper towels, then season with garlic powder, smoked paprika, kosher salt, and black pepper.
  • Heat vegetable oil in a large skillet over medium-high heat. Sear chicken thighs for 5-7 minutes per side until golden brown. Remove and set aside.
  • Reduce heat to medium and add grated ginger and minced garlic. Stir for 30 seconds until fragrant.
  • Pour in apricot preserves, soy sauce, and honey. Stir well and let simmer for 2-3 minutes until slightly thickened.
  • Return the chicken to the skillet, coating each piece in the glaze. Cook for another 5-10 minutes until the internal temperature reaches 165°F (75°C).
  • Transfer to a serving platter, drizzle with extra glaze, and garnish with sliced green onions.
  • Serve with steamed rice or vegetables.

Notes

For extra flavor, add a pinch of red pepper flakes to the glaze. This dish pairs wonderfully with a side of roasted vegetables or a fresh salad.
