Ingredients
  

  • 4 cups finely diced, cooked chicken breast works best
  • 1 cup mayonnaise provides creaminess and richness
  • 1-2 teaspoons lemon juice adds refreshing acidity
  • 1 rib celery finely diced, brings crunch and freshness
  • 2 green onions sliced, adds mild onion flavor and color

Instructions
 

  • Start with 4 cups of cooked chicken. If you don’t have pre-cooked chicken, boil or roast chicken breasts until fully cooked and then finely dice them.
  • In a large mixing bowl, combine the finely diced chicken with mayonnaise, lemon juice, diced celery, sliced green onions, and pepper.
  • Fold in the golden raisins and toasted chopped walnuts. Gently mix until well combined.
  • Taste the salad and adjust seasoning as needed. Add more lemon juice for acidity or pepper for a kick.
  • Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
