Golden Rice Pilaf with Dried Fruit and Almonds

Ingredients
  

  • 1 cup basmati rice
  • 3 tablespoons unsalted butter
  • 1 small yellow onion finely chopped (about 1 cup)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 2 cloves garlic minced
  • 2 cups water
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup dried fruit (currants, raisins, or finely chopped dried apricots)
  • ½ cup sliced or slivered almonds (toasted)

Stepwise Method: Golden Rice Pilaf with Dried Fruit and Almonds

  • Start by rinsing the basmati rice under cold water. Rinse until the water runs clear, then drain to remove excess starch.
  • In a medium saucepan over medium heat, melt the 3 tablespoons of unsalted butter. Add the finely chopped onion and sauté for about 5 minutes until translucent and fragrant. Stir in the minced garlic, ground cumin, ground turmeric, and ground cinnamon. Cook for another minute until aromatic.
  • Add the rinsed basmati rice to the saucepan, stirring well to coat the grains with the buttery spice mixture. Toast the rice for about 2-3 minutes to absorb the flavors.
  • Pour in 2 cups of water, add salt and freshly ground black pepper. Bring to a boil, then reduce heat to low and cover. Let simmer for about 15-18 minutes until rice is tender and water is absorbed.
  • Remove the rice from heat and fluff with a fork. Gently fold in the dried fruit and toasted almonds, mixing until evenly distributed.
  • Transfer the pilaf to a serving dish and enjoy warm. Optionally garnish with additional almonds or fresh herbs.

Notes

  • Rinse rice thoroughly to ensure a fluffy texture and prevent mushiness.
  • Toast the almonds in a dry skillet for extra crunch and flavor before adding.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat with a splash of water to retain moisture.
