Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup nonfat plain Greek yogurt
  • 1/2 cup honey
  • 1/2 cup packed light brown sugar
  • 1/2 cup butter melted
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 small ripe bananas mashed (or 3 large)

Instructions
 

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • Grease your loaf pan with butter or non-stick spray; optionally line with parchment paper for easy removal.
  • In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon until well combined. Set aside.
  • In another bowl, mix Greek yogurt, honey, light brown sugar, melted butter, unsweetened applesauce, eggs, and vanilla extract until smooth and well blended.
  • Mash the ripe bananas with a fork until smooth but still slightly lumpy for texture.
  • Add the mashed bananas to the wet ingredients and stir gently to combine. Gradually fold in the dry ingredients until just mixed; avoid overmixing.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
