Instructions
Step 1: Heat the olive oil in a large pot over medium heat.
Step 2: Add the diced onion and sauté for about 5 minutes until soft and translucent.
Step 3: Add the minced garlic and sauté for another minute.
Step 4: Pour in the canned tomatoes, oregano, salt, sugar, and pepper. Stir and cook for 2-3 minutes.
Step 5: Add the vegetable stock and bring to a gentle simmer. Cook for 15-20 minutes.
Step 6: Blend the soup until smooth using an immersion blender.
Step 7: Stir in the fresh basil and parmesan cheese, and let simmer for a few more minutes.
Step 8: For the grilled cheese, heat a non-stick skillet over medium heat. Assemble the sandwich with cheese between two slices of bread.
Step 9: Butter the outside of the bread and grill until golden brown, about 3-4 minutes per side.
Step 10: Serve the grilled cheese alongside the tomato soup.
