Ingredients for Tomato Soup

  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 28 ounces Canned whole peeled tomatoes Do not drain
  • 1 teaspoon Dried oregano
  • 1 teaspoon Kosher salt
  • 1 teaspoon Granulated sugar
  • ½ teaspoon Ground black pepper
  • 1 ¾ cup Vegetable stock
  • 2 tablespoons Fresh chopped basil
  • ¼ cup Shredded parmesan cheese

Ingredients for Grilled Cheese

  • 4 slices Bread of choice
  • 4 slices Cheese of choice
  • 2 tablespoons Butter For grilling

Instructions
 

  • Step 1: Heat the olive oil in a large pot over medium heat.
  • Step 2: Add the diced onion and sauté for about 5 minutes until soft and translucent.
  • Step 3: Add the minced garlic and sauté for another minute.
  • Step 4: Pour in the canned tomatoes, oregano, salt, sugar, and pepper. Stir and cook for 2-3 minutes.
  • Step 5: Add the vegetable stock and bring to a gentle simmer. Cook for 15-20 minutes.
  • Step 6: Blend the soup until smooth using an immersion blender.
  • Step 7: Stir in the fresh basil and parmesan cheese, and let simmer for a few more minutes.
  • Step 8: For the grilled cheese, heat a non-stick skillet over medium heat. Assemble the sandwich with cheese between two slices of bread.
  • Step 9: Butter the outside of the bread and grill until golden brown, about 3-4 minutes per side.
  • Step 10: Serve the grilled cheese alongside the tomato soup.

Notes
