Ingredients
  

  • 1 pound chicken breast cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Skewers wooden or metal

Instructions
 

Prepare the Chicken

  • Start by cutting your chicken breast into uniform, bite-sized pieces. This ensures they cook evenly on the grill and makes them easy to enjoy as finger food.

Make the Marinade

  • In a mixing bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, black pepper, and fresh lemon juice. Whisk everything together until well blended.

Marinate the Chicken

  • Add the chicken pieces to the marinade, tossing them until they’re fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. For best flavor, you can marinate for up to 2 hours.

Prepare the Skewers

  • If you’re using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Metal skewers can be used as is.

Thread the Chicken

  • Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to ensure even cooking.

Grill the Chicken Bites

  • Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 4-5 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and has beautiful grill marks. Avoid flipping too often to get nice sear marks and juicy bites.

Serve and Enjoy

  • Remove the chicken bites from the grill and let them rest for a couple of minutes. Serve them as is or with your favorite dipping sauces, fresh salad, or grilled veggies.
