  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons lime juice freshly squeezed
  • 3-4 cloves garlic minced
  • 3 tablespoons fajita seasoning homemade or store-bought
  • ¼ cup fresh cilantro chopped
  • 1.5 pounds chicken breasts sliced lengthwise into cutlets
  • 2 bell peppers red and yellow
  • 1 large onion white or yellow
  • Tortillas for serving

Instructions
 

  • Step 1: In a medium bowl, combine the extra virgin olive oil, soy sauce, freshly squeezed lime juice, minced garlic, and fajita seasoning. Whisk until well mixed.
  • Step 2: Place the sliced chicken breasts in a large zip-top bag or dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and let marinate in the refrigerator for at least 30 minutes.
  • Step 3: While the chicken is marinating, wash and slice the bell peppers and onion into strips and rings respectively.
  • Step 4: Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side until cooked through and internal temperature reaches 165°F (75°C). Remove and let rest before slicing.
  • Step 5: Grill the sliced bell peppers and onion for about 4-5 minutes until tender and charred, turning occasionally.
  • Step 6: Warm tortillas on the grill for about a minute on each side. Layer grilled chicken and veggies onto the tortillas and sprinkle with fresh cilantro. Customize with toppings like avocado, salsa, or cheese.

Notes

For extra flavor, let the chicken marinate overnight. You can also use a grill pan indoors if you can't grill outside.
