Ingredients
  

Chicken

  • 2 pounds boneless skinless chicken thighs excess fat trimmed

Marinade Ingredients

  • 2 tablespoons harissa paste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions
 

  • Step 1: Prepare the Marinade. In a medium bowl, combine the harissa paste, extra virgin olive oil, lemon juice, honey, minced garlic, smoked paprika, ground cumin, kosher salt, and ground black pepper. Whisk until smooth.
  • Step 2: Marinate the Chicken. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  • Step 3: Preheat the Grill. Preheat your grill to medium-high heat.
  • Step 4: Grill the Chicken. Remove chicken from marinade and grill for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
  • Step 5: Rest and Serve. Let the chicken rest for a few minutes before slicing and serving warm.

Notes

For an extra kick, add more harissa paste to the marinade. Use a meat thermometer to ensure doneness.
