Equipment

  • Mixing Bowl
  • Aluminum Foil
  • Grill

Ingredients

Ingredients

  • 2 pounds baby potatoes or new potatoes
  • 3 tablespoons olive oil
  • 4 teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon Italian seasoning (optional) or use your favorite seasoning blend

Instructions

  • Step 1: Prepare the Potatoes - Wash the baby potatoes thoroughly and slice them in half or quarters for even cooking.
  • Step 2: Season Them Up - In a large bowl, add the halved potatoes, drizzle with olive oil, and sprinkle with kosher salt, ground black pepper, and Italian seasoning. Toss until well coated.
  • Step 3: Prepare the Foil - Grab a large piece of aluminum foil, double it over for sturdiness, and create a pouch for the potatoes.
  • Step 4: Wrap It Up - Pour the seasoned potatoes onto the center of the foil, gather the edges, and seal them well to create a pocket.
  • Step 5: Grill Time - Preheat your grill to medium heat (about 400°F). Place the foil pouch on the grill grates and cook for 25-30 minutes, shaking halfway through.
  • Step 6: Serve and Enjoy - Carefully unwrap the foil pouch, check for doneness, and serve warm.

Notes

For uniform cooking, choose potatoes that are similar in size. You can add crushed red pepper flakes for a kick or mix in garlic and fresh herbs for added flavor.
