Measuring Spoons
- 1 lb ground beef (85/15 blend)
- 1 carrot diced
- 1 onion diced
- 1 orange pepper diced
- 2 cloves garlic minced
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp taco seasonings
- 2 tbsp cilantro fresh chopped
Start by washing and dicing your carrot, onion, and orange pepper. Mince the garlic as well. Having everything prepped and ready to go makes the cooking process smooth and efficient.
Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion, carrot, and orange pepper. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.
Push the vegetables to the side of the skillet and add the ground beef. Use your wooden spoon to break it up as it cooks. Season with salt, pepper, and taco seasoning. Cook until the beef is browned and cooked through, about 7-10 minutes.
Once the beef is cooked, mix it with the sautéed vegetables. Stir everything together and let it cook for another couple of minutes to allow the flavors to meld.
Remove the skillet from heat and sprinkle fresh chopped cilantro over the top. Serve immediately, either on its own or with your favorite toppings!
- This dish is versatile; add other vegetables like zucchini or corn for variety.
- Add diced jalapeños or cayenne pepper for a spicy kick.
- Serve with sour cream or Greek yogurt for creaminess.
- Store leftovers in an airtight container in the fridge for up to 3 days.
