  • 2 tablespoons Olive Oil
  • 3 tablespoons All-Purpose Flour
  • 2 cups Chicken Stock
  • 1 can (8-ounce) Tomato Sauce
  • 1 tablespoon Taco Seasoning (store-bought or homemade)
  • 0.5 teaspoon Granulated Sugar
  • 0.25 teaspoon Salt
  • 1 pound Ground Beef
  • 8 pieces Corn or Flour Tortillas
  • 1 cup Shredded Cheese (like cheddar or Mexican blend)

Instructions
 

  • Step 1: Prepare the Sauce - Heat olive oil in a saucepan over medium heat. Whisk in flour and cook for about one minute. Slowly whisk in chicken stock, then add tomato sauce, taco seasoning, sugar, and salt. Simmer for about 5 minutes.
  • Step 2: Cook the Ground Beef - In another pan, cook ground beef over medium heat until no longer pink, about 5 to 7 minutes. Drain excess fat and mix in half of the sauce.
  • Step 3: Assemble the Enchiladas - Preheat oven to 350°F (175°C). Lay a tortilla flat, spoon beef mixture down the center, roll it up, and place seam-side down in a baking dish. Repeat with remaining tortillas and pour remaining sauce over the top. Sprinkle cheese on top.
  • Step 4: Bake - Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  • Step 5: Serve - Let cool for a few minutes before serving. Garnish with cilantro or avocado if desired.

Notes

Extra tips: Add diced jalapeños for heat, or swap ground beef with black beans for a vegetarian version. Leftover sauce can be used for other dishes.
