- 1 pound lean ground beef the star protein for a savory base
- 4 pounds russet potatoes peeled and sliced to build hearty layers
- 1 cup diced yellow onion adds sweetness and depth
- 2 teaspoons minced garlic for aromatic flavor
- 2 teaspoons salt to enhance all the flavors
- 1 teaspoon black pepper a subtle kick of warmth
- 10 ounce cream of mushroom soup can, creamy base that ties everything together
- 10 ounce cheddar cheese soup can, adds rich cheesiness
- 1 cup whole milk to create a smooth and creamy sauce
- 2 tablespoons Worcestershire sauce infuses deep umami flavor
- 2 cups shredded cheddar cheese for that irresistible melty topping
Peel your russet potatoes and slice them into thin, even rounds (about 1/8 inch thick). Set them aside in a bowl of cold water to prevent browning.
Heat a large skillet over medium heat. Add the lean ground beef, breaking it apart as it cooks. Once browned, add diced yellow onion and minced garlic. Cook until onions are soft and beef is fully cooked. Season with salt and pepper, then drain excess fat.
In a large mixing bowl, whisk together cream of mushroom soup, cheddar cheese soup, whole milk, and Worcestershire sauce until smooth.
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish. Layer half of the sliced potatoes on the bottom, spread half of the beef mixture over the potatoes, then pour half of the creamy sauce on top. Repeat layers with remaining potatoes, beef, and sauce.
Sprinkle shredded cheddar cheese evenly over the top layer. Cover tightly with aluminum foil and bake for 1 hour. Remove foil and bake an additional 15-20 minutes until cheese is bubbly and golden and potatoes are tender.
Allow the casserole to rest for 10 minutes before serving. Serve warm with your choice of sides.
- Substitute ground beef with ground turkey or chicken for a leaner option.
- Try sweet potatoes instead of russet for a sweeter flavor.
- This casserole freezes well; assemble without baking and freeze for up to 3 months.
