  • ¾ cup mashed sweet potato Cooked and mashed until smooth.
  • ¾ cup creamy peanut butter Or other nut butter.
  • ½ cup maple syrup
  • 2 tablespoons coconut oil Melted.
  • 1 teaspoon pure vanilla extract
  • cup cocoa powder
  • cup oat flour
  • cup semi-sweet chocolate chips

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Cook your sweet potatoes until tender, then mash them until smooth.
  • Step 3: In a large mixing bowl, combine the mashed sweet potato, peanut butter, and maple syrup. Stir until blended, then add melted coconut oil and vanilla extract.
  • Step 4: Sift in cocoa powder and oat flour, mixing well until the batter thickens.
  • Step 5: Fold in the chocolate chips until evenly distributed.
  • Step 6: Pour the batter into a greased or lined 8x8 inch baking pan and smooth the top. Bake for 25-30 minutes.
  • Step 7: Let the brownies cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

For best results, use ripe sweet potatoes and measure ingredients accurately. Store leftovers in an airtight container.
