Ingredients
  

  • 2 lbs fresh cod fillets
  • 3 tbsp extra virgin olive oil
  • 2 oz water
  • 3 garlic cloves cut into thick slices
  • 10 pitted black olives cut in half
  • 1 medium tomato cut into bite-sized pieces
  • 6 slices lemon
  • 1 small bunch fresh cilantro chopped
  • salt and pepper to taste

Stepwise Method

  • Start by washing your fresh cod fillets under cold water. Pat them dry with paper towels and season with salt and pepper to taste. Chop your garlic, tomato, and cilantro, and slice the olives in half.
  • Place your large skillet on medium heat and add the extra virgin olive oil. Allow the oil to heat up for about a minute.
  • Add the thickly sliced garlic to the skillet and sauté for 1-2 minutes until fragrant and slightly golden. Be careful not to burn the garlic.
  • Gently place the seasoned cod fillets into the skillet. Allow them to cook for about 3-4 minutes on one side until golden brown.
  • Using a spatula, carefully flip the cod fillets over. Add the water to the skillet along with the lemon slices, olives, and tomato pieces.
  • Cover the skillet with a lid and let everything simmer for an additional 5-7 minutes, or until the cod is cooked through and flakes easily with a fork.
  • Once cooked, remove the skillet from the heat. Sprinkle the chopped cilantro over the dish for a fresh finish. Serve immediately and enjoy your Healthy Cod Fish Skillet!

Notes

  • Use a non-stick or cast iron skillet for best results and even cooking.
