For the Muffins
- 1 cup whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/4 cup Truvia sweetener
- 10 tablespoons vanilla Greek yogurt
- 1/2 cup natural honey
- 1 egg
- 1 teaspoon vanilla extract
- 6 tablespoons unsweetened almond milk
- 1/2 cup mini chocolate chips
For the Cream Cheese Filling
- 6 tablespoons reduced-fat cream cheese softened
- 2 tablespoons Truvia sweetener
Mixing the Batter
In a large mixing bowl, whisk together whole wheat flour, unsweetened cocoa powder, baking powder, baking soda, and sea salt until evenly combined.
In another bowl, combine Truvia sweetener, Greek yogurt, honey, egg, vanilla extract, and unsweetened almond milk. Whisk until smooth and well combined.
Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Avoid overmixing to keep muffins light.
Fold in mini chocolate chips, reserving a few to sprinkle on top before baking.
Preparing the Filling and Assembling
In a small bowl, mix softened reduced-fat cream cheese with Truvia sweetener until smooth and creamy for the filling.
Spoon about a tablespoon of muffin batter into each muffin cup, add a dollop of cream cheese filling, then cover with more batter. Top with remaining chocolate chips.
Baking and Cooling
Bake muffins in the preheated oven for 18-20 minutes until a toothpick inserted in the center comes out clean.
Let muffins cool in the tin for a few minutes before transferring to a cooling rack to cool completely.
- Do not overmix the batter to avoid dense muffins.
- Rotate the muffin tin halfway through baking for even cooking.
- Ensure cream cheese filling is fully covered by batter to prevent leaking.
- Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Freeze muffins for up to 3 months and thaw before serving.
