Ingredients
  

  • 2 eggs
  • 1 cup peanut butter natural and unsweetened is best
  • ½ cup pure maple syrup
  • 1 teaspoon vanilla extract optional
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon optional
  • ½ teaspoon sea salt
  • 1 cup chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C) to ensure even baking and a perfect golden brown finish.
  • Grease your 8x8 inch baking pan or line it with parchment paper for easy removal after baking.
  • In a mixing bowl, whisk together 2 eggs, 1 cup peanut butter, ½ cup pure maple syrup, and optional 1 teaspoon vanilla extract until smooth and well combined.
  • Add 1 cup rolled oats, 1 teaspoon baking soda, optional ½ teaspoon ground cinnamon, and ½ teaspoon sea salt to the wet mixture. Stir until fully incorporated.
  • If using, fold in 1 cup chocolate chips for extra sweetness and melty texture.
  • Pour the batter into the prepared baking pan, spreading evenly. Bake for 20-25 minutes until edges are golden and a toothpick comes out clean.
  • Remove from oven and let cool in the pan for 10-15 minutes. Lift out using parchment paper if used, then slice into bars or squares.

Notes

  • For vegan versions, substitute eggs with ½ cup unsweetened applesauce or 2 flax eggs.
