Ingredients
  

  • 2 pounds baby potatoes halved
  • 4 slices turkey bacon chopped
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C) to get the potatoes crispy on the outside and tender inside.
  • Wash the baby potatoes thoroughly and cut them in half. Chop the turkey bacon into small pieces, about 1/2 inch.
  • In a large mixing bowl, whisk together honey, olive oil, garlic powder, dried thyme, salt, and pepper until smooth.
  • Add the halved potatoes and chopped turkey bacon to the bowl and toss until evenly coated with the glaze.
  • Spread the potatoes and bacon in a single layer on a baking sheet lined with parchment paper or lightly greased.
  • Roast in the oven for 35-40 minutes, stirring halfway through, until golden brown and crispy on the outside and tender inside.
  • Remove from the oven and serve warm as a delicious side dish.

Notes

  • Do not overcrowd the baking sheet to ensure potatoes get crispy, not soggy.
  • Use baby potatoes halved for even roasting and tender insides.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven to keep crispiness.
