Preheat your oven to 375°F (190°C) to prepare for baking.
In a large mixing bowl, combine 1 3/4 cups self-rising flour, 1 1/2 cups plain Greek yogurt, 1 tablespoon honey, 2 1/2 teaspoons fresh herbs, and 1/2 teaspoon salt. Stir with a wooden spoon or spatula until a soft dough forms, being careful not to overmix.
Turn the dough onto a lightly floured surface and gently knead it a few times until smooth. Divide the dough into 12 equal pieces, roll each into a ball, and place on a parchment-lined baking sheet with space between each roll.
Bake the rolls in the preheated oven for 15-20 minutes or until golden brown on top, watching closely near the end.
While baking, prepare the honey butter by mixing melted unsalted butter, 1 1/2 teaspoons honey, and 1/2 teaspoon chopped fresh herbs in a small bowl.
Once the rolls are out of the oven, immediately brush them with the honey butter glaze. Optionally, sprinkle flaky sea salt on top for extra flavor and crunch.
Allow the rolls to cool slightly, then serve warm and enjoy!
