  • Preheat your oven to 400°F (200°C) to ensure even cooking and a nice crust on the steak.
  • Remove the top sirloin steak from the refrigerator and let it come to room temperature for about 30 minutes for even cooking.
  • Pat the steak dry with paper towels. Drizzle olive oil over it, then sprinkle salt and pepper on both sides. Rub the seasonings in to stick well.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear the steak for 3-4 minutes on each side until a brown crust forms.
  • Add minced garlic, butter, and fresh rosemary to the skillet. Baste the steak with the melted butter and garlic mixture for added flavor.
  • Transfer the skillet to the preheated oven. Cook the steak for 5-10 minutes depending on doneness preference. Use a meat thermometer to check: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  • Remove the skillet from the oven. Loosely cover the steak with aluminum foil and let it rest for 5-10 minutes to redistribute juices.
  • Slice the steak against the grain and serve with your favorite sides. Drizzle with the buttery garlic-rosemary sauce from the skillet.
