  • Place the Ghirardelli Baking Chips or chopped Baker's Chocolate into a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  • Pour the melted chocolate onto a sheet of parchment paper. Using your offset spatula, spread the chocolate into an even layer about 1/8 inch thick.
  • Allow the chocolate to set at room temperature for about 10-15 minutes, or until it is firm to the touch but still pliable.
  • Once set but still flexible, use your bench scraper or sharp knife to gently scrape the surface of the chocolate, creating curls by pulling towards you with even pressure.
  • Gather the curls and place them on a clean plate or baking sheet. Store in an airtight container in a cool, dry place until ready to use.
