Instructions
Place the Ghirardelli Baking Chips or chopped Baker's Chocolate into a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
Pour the melted chocolate onto a sheet of parchment paper. Using your offset spatula, spread the chocolate into an even layer about 1/8 inch thick.
Allow the chocolate to set at room temperature for about 10-15 minutes, or until it is firm to the touch but still pliable.
Once set but still flexible, use your bench scraper or sharp knife to gently scrape the surface of the chocolate, creating curls by pulling towards you with even pressure.
Gather the curls and place them on a clean plate or baking sheet. Store in an airtight container in a cool, dry place until ready to use.
