  • ½ cup Pineapple Juice (not fresh)
  • ½ cup Tomato Ketchup
  • ½ cup Light Brown Sugar
  • ¼ cup Soy Sauce
  • 2 tablespoons Unseasoned Rice Vinegar
  • 1 tablespoon Sesame Oil (not toasted sesame oil)
  • 1-2 teaspoons Sriracha (adjust to taste)
  • 3 cloves Garlic (minced)
  • 1 tablespoon Fresh Ginger (grated)
  • 2 pounds Boneless Skinless Chicken Thighs

Instructions
 

  • Step 1: Prepare the Marinade - Whisk together all marinade ingredients in a bowl until well combined.
  • Step 2: Marinate the Chicken - Place chicken thighs in a resealable bag or dish, pour marinade over, seal, and refrigerate for at least 2 hours or overnight.
  • Step 3: Preheat your Grill or Oven - Preheat grill to medium-high or oven to 400°F (200°C).
  • Step 4: Grill the Chicken - Remove chicken from marinade, grill for 6-7 minutes per side until internal temperature reaches 165°F (74°C), or bake for 25-30 minutes in the oven.
  • Step 5: Baste with Remaining Marinade - In the last few minutes of cooking, baste chicken with reserved marinade (only if it hasn't touched raw chicken).
  • Step 6: Serve and Enjoy - Let chicken rest, slice if desired, and serve with sides like rice or salad.

Notes

For extra flavor, add fresh herbs like cilantro or green onion as a garnish. Adjust Sriracha for desired spiciness.
