Hummus Toast

Toasts topped with hummus, poached eggs, avocado and fresh vegetables (with optional fruit) for a quick, satisfying meal.

  • 1 container Sabra Everything Bagel Seasoned Hummusor flavour of your choice.
  • 4 poached eggs
  • 2 avocadospeeled and sliced
  • 1/2 cupcucumber slices
  • 2 tomatoessliced
  • 1 cuparugula
  • 1/4 teaspooneach salt and pepper
  • Pinchchilli flakes
  • 2 teaspoonsolive oildivided
  • 1/2 cuppomegranate arilsoptional
  • 1 cupstrawberriessliced optional
  • 4 slicesRye breadtoasted or no

  • If you want toasted bread, toast the 4 slices of rye bread; otherwise leave them as-is and place on a work surface.
  • Prepare the produce: peel and slice the 2 avocados; slice the 2 tomatoes; measure 1/2 cup cucumber slices; set aside 1 cup arugula; if using, slice the strawberries and have the 1/2 cup pomegranate arils ready. Ensure the 4 poached eggs are heated/ready.
  • Spread hummus: open the 1 container Sabra Everything Bagel Seasoned Hummus (or your chosen flavor) and spread an even layer on each slice of rye bread.
  • Divide and arrange the veggies and fruit: distribute the sliced avocado, cucumber slices, and tomato slices evenly across the 4 hummus-topped toasts. Add the arugula divided among the toasts. If using strawberries and/or pomegranate arils, divide and arrange those on top or alongside the other toppings.
  • Place one poached egg on each toast.
  • Season: sprinkle the 1/4 teaspoon salt and 1/4 teaspoon pepper evenly over the eggs and vegetables, then add a pinch of chili flakes across the toasts to taste.
  • Use the 2 teaspoons olive oil divided as follows: toss the 1 cup arugula with 1 teaspoon olive oil before adding it to the toasts (if not already added), and drizzle the remaining 1 teaspoon olive oil over the assembled toasts as a finishing touch.
  • Serve and enjoy the hummus toasts immediately.

HUMMUS TOAST TIPS• Start with Quality Hummus such as Sabra Hummus. • Pick your favorite toast bread, rye, flat bread, challah, or whichever you really like.• Hummus goes as a first layer on the toast because it will add so much flavor to the bread.• Also by spreading humus first, you allow all veggies to stick perfectly to the toast without wiggling.• If you’re making this completely plant- based, skip the eggs al together or substitute it with tofu.• The way you choose to cook the eggs is completely optional. Hard boiled, pan fried, poached, scrambled egg, they all work! • Have your veggies sliced/chopped to assemble the toast really quickly, and use your favorite ingredients here.• Fruit adds a touch of sweetness and it’s great to have on the side of your toast.• You don’t need any heavy seasoning for this toast recipe since the Sabra Hummus is seasoned with Everything Bagel Seasoning. • Make this into a sandwich and add another layer of bread on the top!• You can also make this recipe using sweet potato toast instead of bread for a super low carb option!• Finally, make this recipe into a platter and spread all the components of the hummus toast on a cutting board or a marbleboard and serve it.
