Ingredients
  

  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 12 ounces fettuccine pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions
 

  • Begin by selecting the "Sauté" function on your Instant Pot. Add the olive oil and let it heat up. Once hot, add the diced chicken, seasoning it with salt and pepper. Sauté for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken and set it aside.
  • In the same pot, add the minced garlic and sauté for about 30 seconds, until fragrant. Be careful not to burn it, as burnt garlic can turn bitter.
  • Pour in the chicken broth and stir to deglaze the pot, scraping up any bits stuck to the bottom. Add the fettuccine pasta, making sure it's submerged in the liquid.
  • Place the cooked chicken back into the pot. Close the lid and set the valve to "Sealing." Select the "Manual" or "Pressure Cook" function and set the timer for 6 minutes on high pressure.
  • Once the cooking time is complete, perform a quick release by carefully turning the valve to "Venting." Allow the steam to escape before opening the lid.
  • Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy and well combined. Adjust seasoning with more salt and pepper if necessary.
  • Dish out the creamy chicken Alfredo into bowls and garnish with chopped parsley if desired. Enjoy your restaurant-quality meal right at home!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on stovetop or microwave, adding splash of cream or broth if sauce thickens.
