- 1 lb boneless and skinless chicken breast sliced horizontally into halves
- 1/4 cup all-purpose flour for dredging
- 1 pinch salt to season chicken
- 3 dashes ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 cloves garlic minced
- 1/2 cup chicken broth
- 1/2 cup heavy whipping cream
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon salt or to taste, for sauce
- 2 1/2 tablespoons lemon juice
- 1 tablespoon non-pareil capers in jar, use capers only
- 1 tablespoon chopped parsley for garnish
Slice chicken breasts horizontally into halves. Season both sides with a pinch of salt and ground black pepper.
Dredge each chicken piece in flour, shaking off excess.
Set Instant Pot to sauté mode. Add olive oil and unsalted butter. Brown chicken pieces in batches for 2-3 minutes per side. Remove and set aside.
Add minced garlic to the pot and sauté for about 30 seconds until fragrant.
Pour in chicken broth and scrape bottom to deglaze. Stir in heavy cream, Parmesan cheese, and salt. Add lemon juice and capers, mixing to create creamy sauce.
Return browned chicken to the pot, submerging it in the sauce.
Close lid, set valve to sealing, and cook on high pressure for 6 minutes. Allow natural release for 5 minutes, then quick release remaining pressure.
Remove chicken and place on serving platter. Pour sauce over and garnish with chopped parsley. Serve immediately.
