Ingredients
  

  • 6 slices bread choose from brown, white, or multi-grain
  • 2 tablespoons softened butter
  • 3 large eggs
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 7-8 ounces aged Irish cheddar shredded
  • ½ teaspoon cracked black pepper
  • 1 tablespoon fresh chopped chives

Instructions
 

  • In a mixing bowl, whisk together the eggs, Dijon mustard, Worcestershire sauce, cracked black pepper, and chopped chives until well combined. Stir in the shredded aged Irish cheddar until even.
  • Take your slices of bread and spread a layer of softened butter on one side of each slice. On the unbuttered side, add a generous portion of the cheese filling. Top with another slice of bread, butter side up.
  • Heat your non-stick skillet over medium heat. Once hot, place the assembled toasties in the skillet. Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip with a spatula, and continue to cook for another 3-4 minutes until both sides are perfectly crisp and the cheese is melted.
  • Remove the toasties from the skillet and let them rest for a minute before slicing in half. Serve warm, perhaps with a side salad or your favorite dipping sauce. Enjoy the gooey, cheesy goodness!
