Oil and Spices

  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika or smoked paprika
  • ¼ teaspoon cayenne powder (optional)
  • ¼ teaspoon ground black pepper

Instructions
 

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: Pat the chicken thighs dry with paper towels.
  • Step 3: In a small bowl, combine the kosher salt, garlic powder, onion powder, paprika, cayenne powder (if using), and ground black pepper.
  • Step 4: In a large mixing bowl, add the chicken thighs and drizzle with olive oil. Coat evenly and sprinkle the spice mixture on top.
  • Step 5: Line a baking sheet with parchment paper and arrange the chicken in a single layer.
  • Step 6: Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  • Step 7: Let the chicken rest for about 5 minutes before serving.

Notes
