Ingredients
  

  • 1 cup almond flour 100g
  • 1 cup mature cheddar cheese finely grated, 5.3 ounces/150g
  • 1 teaspoon psyllium husk or ground flaxseed
  • 1 medium egg
  • 2 tablespoons olive oil
  • sesame seeds optional, to coat

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures that your cheese straws bake evenly.
  • In a mixing bowl, combine the almond flour, grated cheddar cheese, and psyllium husk or ground flaxseed. Mix well until all the dry ingredients are evenly distributed.
  • Crack the egg into the bowl and drizzle in the olive oil. Mix until a dough starts to form. You may need to use your hands to get everything combined thoroughly.
  • On a piece of parchment paper, transfer the dough and flatten it slightly. If desired, sprinkle sesame seeds on top and press them gently into the dough. Use a rolling pin to roll the dough out to about 1/4-inch thickness.
  • Using a sharp knife or pizza cutter, cut the rolled-out dough into strips, making them as wide or narrow as you prefer.
  • Transfer the strips to a baking sheet lined with parchment paper. Bake in the preheated oven for 10-15 minutes, or until the cheese straws are golden and crispy.
  • Once baked, allow the cheese straws to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious Keto Cheese Straws as a snack or with your favorite dip!
